Ingredients

  • 6 cups kale, stems removed and chopped 
  • 1/4 cup olive oil 
  • 2 tbsp lemon juice 
  • 1 tbsp Dijon mustard 
  • 1 tsp honey or maple syrup 
  • 1/4 tsp garlic powder 
  • Salt and pepper to taste 
  • 1/4 cup Parmesan cheese, shredded  (optional for vegan)
  • 1/4 cup sliced almonds or sunflower seeds 
  • 1/4 cup dried cranberries or raisins 

Instructions

  1. Massage the Kale: Place chopped kale in a large bowl. Drizzle with a little olive oil and a pinch of salt. Massage the leaves for 2-3 minutes until they soften and turn darker green.
  2. Make the Dressing: In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, honey, garlic powder, salt, and pepper.
  3. Assemble the Salad: Pour the dressing over the kale and toss to coat evenly.
  4. Add Toppings: Sprinkle Parmesan cheese, almonds, and cranberries over the salad. Toss gently and serve.
