  • 1/4 cup extra shredded coconut (for coating)

Instructions

  1. Prepare the Coconut Mixture:
    • In a mixing bowl, combine shredded coconut, sweetened condensed milk, vanilla extract, and salt. Mix well until a sticky dough forms.
  2. Shape the Truffles:
    • Scoop small portions (about 1 tablespoon each) and roll them into smooth balls. Place them on a parchment-lined tray.
  3. Chill:
    • Refrigerate the truffles for 30 minutes to firm up.
  4. Melt the Chocolate:
    • In a microwave-safe bowl, melt white chocolate with coconut oil in 15-second intervals, stirring until smooth.
  5. Coat the Truffles:
    • Dip each chilled truffle into the melted white chocolate, rolling to coat evenly.
    • Place them back on the tray and sprinkle with extra shredded coconut before the chocolate sets.
  6. Set & Serve:
    • Let the truffles set at room temperature or refrigerate for 10 minutes before serving.
