Ingredients
Scale
- 1 cup cottage cheese (smooth or blended for a creamier texture)
- 1/4 cup peanut butter or almond butter
- 2 tablespoons maple syrup or honey (adjust for sweetness)
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/3 cup oat flour (or almond flour for a gluten-free option)

Instructions
- If using regular cottage cheese, blend it in a food processor or blender until smooth.
- Transfer the cottage cheese to a mixing bowl. Stir in peanut butter, maple syrup, vanilla extract, and salt until well combined.
- Gradually fold in the oat flour until the mixture resembles cookie dough. Adjust the flour quantity if the dough is too wet or dry.
- Stir in the mini chocolate chips.
- Chill the dough for 15 minutes if a firmer texture is desired, or serve immediately.
Notes
- For a nut-free option, replace peanut butter with sunflower seed butter.
- Oat flour can be made by blending rolled oats in a food processor until fine.
