Description

Cottage Cheese Flatbread is a light and healthy option packed with protein and perfect for breakfast, snacks, or as a base for your favorite toppings. With a soft texture and slightly tangy flavor, it’s a quick and versatile dish you can customize to suit any meal.

Ingredients

Scale
  • 1 cup cottage cheese
  • 1 cup all-purpose flour (or whole wheat flour)
  • 1 large egg, beaten
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 tablespoon olive oil (for cooking)

Instructions

  • In a mixing bowl, combine cottage cheese, flour, baking powder, and salt. Add the beaten egg and mix until a soft dough forms. If the dough is sticky, add a little more flour.
  • Divide the dough into 4 equal portions and roll each into a ball. Flatten each ball into a thin, round flatbread shape.
  • Heat a non-stick skillet or griddle over medium heat and add a drizzle of olive oil.
  • Cook each flatbread for 2-3 minutes on each side, or until golden brown and cooked through.
  • Serve warm with your favorite toppings, such as avocado, hummus, smoked salmon, or fresh herbs.

Notes

  • For a gluten-free version, use a 1:1 gluten-free flour substitute.
  • Add herbs or spices like rosemary, garlic powder, or black pepper to the dough for extra flavor.
  • These flatbreads can be stored in an airtight container in the refrigerator for up to 2 days and reheated in a skillet.
  • Use these flatbreads as a base for pizzas, wraps, or savory sandwiches.
