Instructions
- Prepare the Coconut Mixture:
- In a mixing bowl, combine shredded coconut, sweetened condensed milk, vanilla extract, and salt. Mix well until a sticky dough forms.
- Shape the Truffles:
- Scoop small portions (about 1 tablespoon each) and roll them into smooth balls. Place them on a parchment-lined tray.
- Chill:
- Refrigerate the truffles for 30 minutes to firm up.
- Melt the Chocolate:
- In a microwave-safe bowl, melt dark chocolate with coconut oil in 15-second intervals, stirring until smooth.
- Coat the Truffles:
- Dip each chilled truffle into the melted dark chocolate, rolling to coat evenly.
- Place them back on the tray and sprinkle with extra shredded coconut before the chocolate sets.
- Set & Serve:
- Let the truffles set at room temperature or refrigerate for 10 minutes before serving.
