Description

These Dark Chocolate Coconut Truffles are rich, creamy, and naturally sweet with the perfect balance of coconut and deep chocolate flavor. A no-bake treat that’s easy to make, these truffles are perfect for holidays, edible gifts, or an indulgent snack.

Ingredients

Scale
  • 2 cups shredded coconut (unsweetened)
  • 1/2 cup sweetened condensed milk
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup dark chocolate (70% cocoa or higher), melted
  • 1 tablespoon coconut oil (optional, for smoothness)
  • 1/4 cup extra shredded coconut (for coating, optional)

Instructions

  1. Prepare the Coconut Mixture:
    • In a mixing bowl, combine shredded coconut, sweetened condensed milk, vanilla extract, and salt. Mix well until a sticky dough forms.
  2. Shape the Truffles:
    • Scoop small portions (about 1 tablespoon each) and roll them into smooth balls. Place them on a parchment-lined tray.
  3. Chill:
    • Refrigerate the truffles for 30 minutes to firm up.
  4. Melt the Chocolate:
    • In a microwave-safe bowl, melt dark chocolate with coconut oil in 15-second intervals, stirring until smooth.
  5. Coat the Truffles:
    • Dip each chilled truffle into the melted dark chocolate, rolling to coat evenly.
    • Place them back on the tray and sprinkle with extra shredded coconut before the chocolate sets.
  6. Set & Serve:
    • Let the truffles set at room temperature or refrigerate for 10 minutes before serving.

Notes

  • Dairy-Free Option: Use dairy-free sweetened condensed coconut milk and vegan dark chocolate.
  • Extra Flavor: Add a teaspoon of espresso powder to the melted chocolate for a mocha twist.
  • Storage: Store in an airtight container in the refrigerator for up to a week or freeze for up to a month.
  • Nutty Variation: Add finely chopped almonds or hazelnuts to the coconut mixture for extra crunch.
