  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 4 large eggs
  • 1 tsp vanilla extract
  • 3 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup milk
  • 1 cup chopped pecans
  • 1/2 cup honey

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour a 9×5 inch loaf pan to prevent sticking.
  3. In a large bowl, cream together the softened butter and granulated sugar until the mixture is light and fluffy.
  4. Beat in the eggs, one at a time, and then stir in the vanilla extract.
  5. In another bowl, whisk together the flour, baking powder, and salt.
  6. Gradually add the dry ingredients to the creamed mixture, alternating with the milk. Start and end with the flour mixture.
  7. Fold in the chopped pecans for a nice crunch.
  8. Pour the batter into the prepared loaf pan.
  9. Drizzle honey over the top of the batter and use a knife to swirl it into the mixture.
  10. Bake in the preheated oven for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
  11. Allow the bread to cool in the pan for 10 minutes, then turn it out onto a wire rack to cool completely.
  12. Slice and serve with extra honey butter if you like!
