Description

Pawleys Island Pimento Cheese is a rich and creamy Southern delicacy that embodies the charm of its coastal origin. With bold, tangy flavors and a touch of spice, this cheese spread is perfect for sandwiches, crackers, or as a dip for your favorite veggies.

Ingredients

Scale
  • 2 cups sharp white cheddar cheese, shredded
  • 1 cup sharp yellow cheddar cheese, shredded
  • 1/2 cup mayonnaise (preferably Duke’s for authenticity)
  • 1/4 cup cream cheese, softened
  • 1/4 cup diced pimentos, drained
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional, for heat)
  • 1/4 teaspoon garlic powder
  • Salt and freshly ground black pepper to taste

Instructions

  • In a large mixing bowl, combine the shredded white and yellow cheddar cheeses.
  • Add mayonnaise, cream cheese, and Worcestershire sauce. Mix until smooth and creamy.
  • Fold in the diced pimentos, smoked paprika, cayenne pepper, garlic powder, salt, and black pepper. Mix thoroughly.
  • Adjust the seasoning and consistency with additional mayonnaise or spices as desired.
  • Chill in the refrigerator for at least 1 hour to allow the flavors to meld.
  • Serve with crackers, toasted bread, fresh vegetables, or as a topping for burgers and sandwiches.

Notes

  • For a unique twist, stir in crumbled bacon, chopped jalapeños, or a splash of hot sauce.
  • Use freshly grated cheese for the best texture and flavor; pre-shredded cheese may have additives that affect the creaminess.
  • Store in an airtight container in the refrigerator for up to 5 days.
  • This spread pairs wonderfully with sweet tea or a light white wine for a true Southern experience.
