Description
Pineapple casserole is a Southern classic that combines sweet pineapple, savory cheese, and a buttery cracker topping. This unique dish is perfect as a side for holiday dinners or a delightful dessert.
Ingredients
Scale
- 2 cans (20 oz each) pineapple chunks, drained (reserve 1/4 cup juice)
- 1/2 cup granulated sugar
- 3 tbsp all-purpose flour
- 1 cup shredded sharp cheddar cheese
- 1 cup crushed Ritz crackers
- 1/4 cup unsalted butter, melted
Instructions
- Preheat Oven: Preheat oven to 350°F (175°C). Grease a 9×9-inch baking dish.
- Prepare Filling: In a large bowl, mix the pineapple chunks, reserved pineapple juice, sugar, flour, and shredded cheddar cheese. Stir until well combined.
- Assemble the Casserole: Pour the pineapple mixture into the prepared baking dish. Spread evenly.
- Add Topping: In a separate bowl, mix crushed Ritz crackers with melted butter. Sprinkle the cracker mixture over the pineapple filling.
- Bake: Bake for 25-30 minutes, or until the topping is golden brown and bubbly.
- Serve: Allow to cool slightly before serving as a side dish or dessert.
Notes
- Choose Fresh or Canned Pineapple: While canned pineapple is convenient, fresh pineapple chunks can be used for a brighter flavor.
- Adjust Sweetness: Reduce the sugar to 1/4 cup if you prefer a less sweet dish.
- Cracker Alternative: Use panko breadcrumbs or crushed cornflakes if Ritz crackers aren’t available.
- Add a Kick: Sprinkle a pinch of cayenne pepper into the topping for a subtle spicy-sweet contrast.
- Storage Tips: Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven to retain the crispy topping.
