Hearty and flavorful, these easy stuffed green peppers are filled with seasoned ground beef, rice, and tomatoes, topped with melted cheese for a comforting and satisfying meal the whole family loves.
Ingredients
4 large green bell peppers
1 lb (450g) ground beef
1 cup cooked white rice (about 1/2 cup uncooked)
1 small onion, finely chopped
2 cloves garlic, minced
1 can (14.5 oz) diced tomatoes, drained
1 tsp Italian seasoning (or a mix of oregano & basil)
Salt & pepper to taste
1 cup shredded cheddar or mozzarella cheese
1 can (8 oz) tomato sauce (or use pasta sauce)
Olive oil (for sautéing)
Instructions
Prep the Peppers:
Cut the tops off the green peppers and remove seeds/membranes.
Boil peppers in salted water for 5 minutes to soften slightly. Drain and set aside.
Cook the Filling:
In a skillet over medium heat, add a little olive oil. Sauté onions and garlic until fragrant (2–3 mins).
Add ground beef and cook until browned. Drain excess fat.
Stir in cooked rice, diced tomatoes, Italian seasoning, salt, and pepper. Let it heat through (about 5 mins).
Stuff the Peppers:
Preheat oven to 375°F (190°C).
Place peppers upright in a baking dish. Fill each with the beef and rice mixture.
Spoon a little tomato sauce over each stuffed pepper.
Bake:
Cover with foil and bake for 30 minutes.
Uncover, sprinkle cheese on top, and bake uncovered for another 10 minutes, until cheese is melted and bubbly.
Notes
- Parboil the peppers before stuffing to ensure they’re tender after baking.
- Drain excess fat from the beef to avoid greasy filling.
- Use leftover rice to save time, or cook it while prepping the peppers.
- Feel free to swap in brown rice or quinoa for a healthier twist.
- For a saucier dish, add extra tomato sauce to the bottom of the baking dish.
- Store leftovers in an airtight container in the fridge for up to 3 days; they reheat well!
