Ingredients

  • 1 can (15 oz) cannellini beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes, with juice 
  • 4 cups chicken or vegetable broth 
  • 4 cups fresh spinach or kale, chopped 
  • 1 tsp Italian seasoning 
  • 1/4 tsp red pepper flakes (optional) 
  • Salt and pepper to taste 

Instructions

  1. Sauté Aromatics: Heat olive oil in a large pot over medium heat. Add diced onion and garlic, and sauté until fragrant and softened, about 3-4 minutes.
  2. Add Base Ingredients: Stir in cannellini beans, diced tomatoes, and broth. Bring the mixture to a simmer.
  3. Add Greens: Add chopped spinach or kale to the pot. Simmer for 10 minutes, stirring occasionally, until greens are wilted and tender.
  4. Season: Stir in Italian seasoning, red pepper flakes (if using), salt, and pepper. Adjust seasonings to taste.
